The Buildout Podcast: Sip & Guzzle

This episode of The Buildout is brought to you by Farmer’s Gin. Whether you are building a bar, you currently are operating a bar, or you just run a bar at home, you need to have a Martini on your menu — and that Martini deserves Farmer’s Gin. Farmer’s Gin is created by the same amazing people that created Michter’s Bourbon. Every single bar deserves a great gin, and Farmer’s Gin is perfect for creating all of the classic gin cocktails. Farmer’s Gin is made in Idaho at the first organic distillery in the United States. It’s made using Regenerative Organic Certified grain that’s grown on a family farm. The regenerative approach they use supports soil health, biodiversity, and also just creates a really delicious gin. You can learn more by following Farmer’s Gin on their socials — @FarmersGin — or heading to farmersgin.com to learn more.

Shingo Gokan and Steve Schneider are an unlikely pair. Shingo has roots in the precision of Japanese mixology, while Steve comes from the high-energy, hospitality-driven world of New York speakeasy Employees Only. But their complementary skillsets are what make the business partners such a powerhouse duo. After years of friendship and bouncing ideas off each other, the pair opened Sip & Guzzle in New York’s West Village in 2024 — now, one of the most acclaimed cocktail spots in the city and across the globe.

On today’s episode of “The Buildout,” Adam sits down with both bartenders to discuss what it took to open Sip & Guzzle and how it became one of the city’s most talked-about bars. How do their differing styles sharpen each other? How did such a famed bar also end up serving one of New York’s most popular burgers?
